
Stop Drying Out Your Bread: A Better Way to Heat
Ever pull a loaf out of your portable oven only to find it’s bone-dry inside, even though the crust looks great? It happens because most heating elements are just too blunt. They blast the outside of the bread for way too long, sucking all the moisture out of the center before the middle even gets warm. We found a better way: shortwave infrared (IR) lamps. Instead of just heating the air around the bread, these lamps beam energy straight into the dough.
Why this actually works
Here’s the thing about shortwave IR—it’s fast. Really fast. It penetrates deeper into the loaf almost instantly. Because the heat gets where it needs to go so quickly, you can slash your bake time. You aren’t leaving your bread in the oven long enough for it to turn into a crouton. You get that satisfying, crackly crust, but the inside stays soft and fluffy. Just the way it should be.
The nitty-gritty on the hardware
We make these replacement lamps out of high-purity quartz glass. Why? Because portable ovens are brutal. They heat up and cool down fast, and regular glass would just shatter. Quartz can take that kind of thermal shock without breaking a sweat. If you’re swapping one out, most of these units use an R7s or SK15 connector, so it’s a simple drop-in. But a word of caution:check your wattage and voltage. They have to match your oven’s transformer exactly. Go too high, and you might fry your control board. Go too low, and you’re back to those long bake times and dry bread.
A few things to keep in mind
IR lamps pack a serious punch. Since the heat is so concentrated, positioning is everything. If the lamp is sitting too close to the dough, you’ll end up with a burnt top and a raw bottom. Give it a little breathing room. Also, these tubes hate grime. In a kitchen, flour and grease get everywhere. If that stuff builds up on the glass, it creates “hot spots” that can actually crack the tube. Keep it simple: every now and then, give the glass a quick wipe with some isopropyl alcohol. It keeps the heat even and makes your lamps last a lot longer.
